A
dégustation is
a tasting menu.
Chefs
and Sommeliers showcase a particular flavor profile, wine or create
a selection of items that are in season to taste, or they join forces
to pair food and wine in a tasting menu set in courses.

Looking up the
word 'déguster' in Larousse's French-English English-French
Dictionary, one can learn that it is a verb, meaning 'to taste,
to sample, to sip, to relish.' A dégustation is a real appreciation,
a savoring, of a particular flavor, and a tasting menu is just that,
an opportunity for someone to experience something by way of taste.
