A picnic style cake, where the cake is made and served in the baking pan.

Coco-Cola Cake with Coke Frosting

Ingredients for Cake
  • 2 cups sugar
  • 2 cups flour
  • 1 1/2 cups miniature marshmallows
  • 1/2 cup butter
  • 1/2 cup oil
  • 3 tablespoons cocoa
  • 1 cup Coca-Cola (or plain cola soda)
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla
Ingredients for Frosting
  • 1/2 cup butter
  • 6 tablespoons Coca-Cola (or plain cola soda)
  • 3 tablespoons cocoa
  • 1 lb. powdered sugar
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped
Procedure
  1. Preheat oven to 350 degrees F. Grease a 13x9" baking pan.
  2. Sift the sugar and flour together in a bowl; add marshmallows. Set aside. In a saucepan, mix butter, oil, cocoa and Coca-Cola, and bring just to a boil. Pour this hot mixture over the dry ingredients and mix very well. Add in buttermilk, baking soda, eggs and vanilla. Pour into prepared pan, and bake for 45 minutes, or until cake tests done, and frost with warm icing immediately in pan.
  3. For the Frosting: Combine butter, Coca-Cola and cocoa in saucepan. Bring to boil, and pour over sugar; blend very well. Add in vanilla and pecans. Spread this over the hot cake in pan. When cooled, cut this cake into squares.
