Apricot Success (Biscuit Sponge Cake)

Soft sponge cake with dried apricots.


Ingredients

  • 2# 3 oz. powdered sugar

  • 2# 3 oz. almond powder

  • 1# 1 oz. all purpose flour

  • 17 each egg yolks, beaten lightly

  • 3# 2 oz. egg whites

  • 1# 12 oz. granulated sugar

  • 2# 8 oz. dried apricots, finely chopped

Procedure

  1. Preheat oven to 400°F. Line full sheet pans with parchment paper.

  2. Sift the first 3 ingredients together .

  3. Add a little of the sifted dry ingredients with the dried apricots to prevent lumping.

  4. Whip the egg whites and the granulated sugar together to make a firm meringue. Add in yolks. Next, add in dry ingredients, and then the apricots.

  5. Scale 2# 12 oz. for each full sheet pan; yields 4 1/2 trays.
