Buttermilk Pie
This pie is good for both summer and winter, and is good with fresh berries or fruit.

1/2 c butter

1 c buttermilk

2 c sugar

1 t vanilla

3 T flour

1 unbaked pie shell, 9 inch, edge crimped high

3 eggs, beaten

Preheat oven to 350°F.

Beat butter and sugar, then add flour and eggs. Add in buttermilk, last the vanilla. Place pie shell into oven, and carefully pour in the filling. Bake 45 to 50 minutes. Cool before serving.

Shoo-Fly Pie
This is a molasses pie with ‘layers.’

Unbaked 9" pie crust

Bottom Layer:

3/4 c boiling water

1 c dark molasses

1/2 t baking soda

1 egg, beaten

Top Layer:

1/2 c brown sugar

2 T shortening

1 1/4 c flour

Preheat oven to 375°F.

Dissolve baking soda in hot water. Cool the liquid slightly and add in the molasses and beaten egg. In separate bowl, combine sugar and flour. Cut in shortening until it resembles fine crumbs. Pour 1/3 of the bottom layer into pie crust. Add 1/3 of top layer, then continue alternating with the crumb top layer last, on top. Bake for 35 minutes.
