spiced pinto bean chocolate cake recipe

Use canned pinto beans or leftover plain cooked ones.

Spiced Pinto Bean Chocolate Cake

Ingredients
  • 1/4 cup butter
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 2 cups pinto beans, cooked and mashed
  • 1 cup flour
  • 1 cup sugar
  • 4 tablespoons cocoa (can be omitted for just a spice bean cake)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 cups apples, diced
  • 3/4 cup raisins
  • 1/4 cup walnuts, chopped
Procedure
  1. Preheat oven to 375°F. Grease 13x9" baking pan.
  2. Cream butter well. Add in eggs one at a time; next add vanilla. Blend in beans. Sift together all the dry ingredients, and add to cream mixture. Fold in apples, raisins and walnuts.
  3. Pour this into prepared dish, and bake for 45 to 50 minutes, or until cake tests done.
