microwave peanut brittle

The microwave isn't used much in my kitchen for confectionery besides melting chocolate and butter, but it is helpful when making an easy peanut brittle. This is an old recipe from my recipe files.

Easy Microwave Peanut Brittle

Ingredients
  • 1 cup raw peanuts
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon butter
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
Procedure
  1. Stir the peanuts, sugar, syrup ans alt in a 1 1/2 quart casserole. Place in microwave and cook for 4 minutes, stir candy well, and cook for 4 more minutes.
  2. Add butter, mix to combine, and return to oven. Cook for 1 more minute. Peanuts will be lightly browned and the candy syrup will be very hot. Remove from microwave and add in the baking soda and vanilla, and gently stir the candy until it is foamy. Pour the mixture onto a lightly greased baking sheet, or a baking sheet that's been lined with heavy duty foil and well buttered. Let cool, break into irregular pieces, and store in an airtight container.
