Colorado’s Sugar Art Show
February 2-4, 2007
Held at the Colorado Garden and Home Show, competitions will include gingerbread, funtastical flowers, jardin de l’amour extravagant cake competition, and a tasting competition using star anise and kaffir lime leaves.

Carolina Chocolate Festival
Feb. 2-4, 2007
Cooking demos, chocolate spa night, PAWS chocolate Sunday brunch. This benefits Ginger’s House, The Carteret County Domestic Violence Program and other local charities.

Chocolate Lovers Festival
Feb. 3-4, 2007, City of Fairfax, Virginia
Includes chocolate challenge, arts extravaganza using chocolate as a medium, chocolate chip pancake breakfast, Taste of Chocolate and Chocolate Covered Fairy Tales. This benefits The Women’s Center.

Pies, Pies, Pies!
Feb. 5-8, 2007
From AIB International, this course will discuss and teach pie dough and filling formulations, evaluate finished pie characteristics for customers, troubleshoot problems, and the functions of ingredients. 4 day class at the AIB Headquarters in Manhattan, Kansas.


For the Love of Chocolate
Feb. 10, 2007, Chicago
Chocolate festival to benefit inner city high school students through Careers through Culinary Arts Program. Festival highlights: chocolate body art, edible couture attire, chocolate wedding cake competition, Cocoa Sutra Room, and the 2007 Salsa (dance) competition.

Ventura Country 2nd Annual Chocolate Festival
Feb. 10-11, Ventura Country Fairgrounds
This festival benefits The Restoring Hope Foundation of Southern California.

8th Annual Chocolate Fest
Feb. 10-11, Garfield Park Conservatory Alliance
Event will include free chocolate samples, children’s acitvities, opening of chocolate pods of a cacao tree.

Gourmet Cookie Production
Feb. 19-22, 2007
From AIB International, this course will go over ingredient science and the secrets of incorporating gourmet into cost controls. Ingredient learning includes flour, shortening, sweeteners, nut products, chocolate and cocoa. Processing and production includes refrigerated and frozen doughs, brownies, oven techniques and formula balance. 4 day class at the AIB Headquarters in Manhattan, Kansas.

CoffeeFest Chicago
Feb. 23-25, 2007
Free classes (included in registration) include: Basic Barista Techniques, Espresso/Cappuccino 101Italian Style, and Opening a New Cafe? Special attractions include: hands-on workshops for Barista, Smoothies, Free Pour Latte Art, Gelato & Frozen Dessert, and Roasting Basics. Also,

This class is to boost knowledge and skills in improving sanitation and food safety programs. 2 day course from AIB International, speakers will include Heads of Food Saftey Education and Head of OSHA Compliance & Educational Product Development at the AIB.

Joint Program 9th Annual Dairy Ingredients Symposium & 3rd International Spray Dired Milk Conference
Feb. 26-28, 2007, San Francisco
The DMI Ingredients program will join Cal Poly’s Dairy Products Technology Center in co-organizing and co-sponsoring the 2007 Dairy Ingredients Symposium. The symposium is designed to provide an overview and update on the latest trends in the marketing, applied science, manufacturing technology and food applications of value-added dairy ingredients, including whey derived and milk derived concentrates and powders.
