New on PastrySampler: Flourless Chocolate Cake with Ganache

Flourless chocolate cake is as simple a dessert as it comes. Containing just yolks, eggs, sugar, chocolate and butter, it is a grown up’s version of a brownie cake. Flourless chocolate cake is rich and decadent in flavor, but light in texture.

For the cake in the photo, I made some chocolate ganache, made with 60% cacao dark chocolate. The more cacao percentage, the less sweet and more rich it will be. Luckily, nowadays this chocolate is as common as standard semisweet chocolate in the baking aisle.
