Espresso Syrup
Use fresh brewed espresso for best flavor. This versatile syrup can be used as a flavoring for desserts and sauces, or used on pancakes, ice cream and gelato. Keep this on hand in the refrigerator.

3/4 c sugar 2 t fresh orange zest
1/4 c water 1 t cinnamon
1/2 c brewed espresso  

In small saucepan, heat sugar and water until sugar dissolves, stirring all the while. Bring to boil and let boil for 3 minutes. Remove pan and let cool for 1 minute. Add in the rest of the ingredients. Pour into jar and let sit for 1/2 hour before using.

Chocolate Syrup
Indispensable for such things as chocolate milk, topping for ice creams and hot fudge sauces.

7 T cocoa 1/4 c butter
1 c sugar 1/8 t salt
3/4 c evaporated milk 1/2 t vanilla

Combine in microwavable dish the cocoa, sugar and milk. Whisk smooth. Heat on high for 1 minute. Remove from microwave and add in butter and salt. Cook on high for 1 1/2 minutes more. Remove and add in vanilla. Whisk thoroughly. Pour into a jar, let cool, cover and refrigerate.
